Pastured pork cacciatore: plain: Plain

Cacciatore is a small, aged salami, perfect for picnics and platters. Ours is made from the pasture-raised, heritage pigs we source whole from local, regeneratively-managed farms.

Ingredients: pastured NSW pork, salt, dextrose, red wine (contains sulphites, starter cultures, spices, mineral salts (341), antioxidant (316), preservative (250, 251)

This product is fresh, not frozen. Cured for us by Dolce Vita Fine Foods.

The Producers
We buy whole bodies of a range of different sized pigs on a rotating basis from a number of farms - from big baconers through to suckling pigs. Most available cuts come from porker pigs which are about 50-65 kg that are 5-7 months old. The pork we source is:

  • packed with the farm and breed clearly labelled;
  • hormone and antibiotic-free;
  • entirely free ranging on regeneratively-managed, chemical-free pasture;
  • a mix of mostly slow-growing, heritage breeds including Berkshire, English Large Black, Wessex Saddleback, Tamworth, Large White, Landrace, Duroc;
  • from local farms.
