All our cured pork products are made from slow-growing, heritage-breed, pasture-raised pigs that yield the most delicious and healthy pork. This is a rare thing. 

At most, only about 1.0% of the cured pork sold in restaurants, cafes, supermarkets, butchers and delis is made from genuine, pasture-raised pork.
